- 1/2 c. chopped pecans
- 1 c. shredded unsweetened coconut
- In a large bowl, using a hand mixer, mix in together all the ingredients cream cheese, coconut flour, stevia, vanilla, cinnamon, and nutmeg. Fold in carrots and pecans. Roll as many as you can in shredded coconut and serve
