Egg net Spring rolls
- Non Stick Pan
- 6 eggs lightly beaten
- 1 teaspoon sesame oil
- 1 tablespoon peanut oil
- 500 g pork mince
- 2 garlic cloves crushed
- 1/4 cup hoisin sauce
- 420 g vegetables 1-minute packet ready to stir-fry
- 1 tablespoon hoisin sauce extra
- 2 tablespoons coriander fresh
- In a bowl combine egg and sesame oil, heat a medium non stick pan and add peanut oil put tablespoon of egg mixture to form an omelet shape cook for 30 seconds, then repeat to the remaining egg mixture. On the same pan heat peanut oil cook the stir fry minced together with garlic and hoisin sauce for 2 minutes, add vegetables (do not over cook the vegetable) place omelet on the plate top with mince mixture roll and close, repeat onto the remaining omelets and mince, combine extra hoisin sauce and 2 tablespoon cold water in a bowl, sprinkle with coriander leaves.
