The mahi-mahi or common dolphinfish is a surface-dwelling ray-finned fish found in off-shore temperate, tropical, and subtropical waters worldwide. Also widely called dorado and dolphin, it is one of two members of the family Coryphaenidae, the other being the pompano dolphinfish. Mahi-mahi has a firm texture and works well for baking, searing, or grilling. it as a good choice when considering environmental impact. It's also a moderate mercury fish and is a good source of protein. Mahi Mahi have gorgeous gold and yellow skin that must be removed before cooking. The flesh should be a pinkish-beige in color. If there are darker spots in your filet those parts may have a bit of a stronger taste but can definitely be eaten or trimmed away.
