Whichever country, whoever you are, I think fried chicken is already on their top list. This recipe is quick, easy and healthier version of our classic fried chicken, You will never know that you are actually eating healthy with ingredients that is used for this recipe and the way it was cook.
- 2 lbs chicken drumsticks
- ½ cup sour cream or Greek yogurt
- 2 tbsp olive oil
- 2 tbsp jerk seasoning
- 1 tsp salt
- 5 oz. pork rinds
- 3 oz. unsweetened finely shredded coconut
- 4 tbsp olive oil
- 1 lb green cabbage
- 1 cup mayonnaise
- salt and pepper
- In a big plastic bag mix the marinate ingredients jerk seasoning, salt and sour cream together with chicken, shake to cover all the chicken pieces and let it sit for 15 minutes. take out the marinated chicken from the plastic bag, put in a clean plastic bag, meanwhile in a food processor mix your breading, mix in pork grinds, coconut flakes mix well. Put the mixture in the chicken plastic ans shake well till all chicken pieces is covered. in a greased baking dish put the breaded chicken, drizzle with olive oil over the chicken. bake for 40 to 45 minutes, until chicken is cook.
