Super food Tortilla
- Chargrill Pan
- 500 g orange sweet potato peeled, cut into cubes
- 1 tablespoon olive oil
- 4 soft flour tortillas
- 20 g baby kale leaves
- 425 g black beans drained, rinsed, warmed
- 1/3 cup Greek yoghurt
- Lime zest to serve
- In a pre heated 220C oven, place sweet potato on a tray drizzled with oil and seasoned, cook for 20 minutes. While preheat a chargrill pan on a medium high to cook tortilla for a minute each side. To serve: top tortilla with sweet potato, beans and kale, roll over yogurt and sprinkle with lime zest.
