All you have to do is make the meatballs, brown them, make the red curry sauce, add in your meatballs, and then let everything simmer to perfection.
When I think of quick weeknight meals, this is one of my go-to recipes.
These turkey meatballs are quick, filling, and the recipe makes more than enough so that you have plenty for a delicious lunch the next day.

Turkey Meatballs in a Creamy Red Curry Sauce
Ingredients
- Meatballs
- 2 lbs Ground turkey
- 1/3 cup Finely chopped fresh basil
- 4 Garlic cloves minced
- 2 Green onions finely chopped
- 2 tbsp Fish sauce
- 1 tsp Red curry paste
- 2 tbsp Sugar
- 1 tbsp Cornstarch
- 2 tsp Coarse kosher salt
- 2 tbsp Canola oil
- Curry Sauce
- 3/4 cup Onions finely diced
- 4 Garlic cloves minced
- 2 tbsp Thai red curry paste
- 2 14 oz cans full fat coconut milk or cream
- 3 tbsp Lime juice
- 1 tbsp Fish sauce
- 1 tbsp Sugar
- 1 tsp Salt optional
- 1/2 cup
- 1/2 cup Cilantro leaves (optional)
- Chili flakes (optional)
Instructions
- For the meatballs : mix all ingredients together, using a mixer is optional, mix all ingredients using your hand. In a large pan cook the meatballs, using a cookie scooper or tablespoon to create a ball and cook in the pan until it turns brown, transfer and set aside.
- In the same pan, cook onions and garlic, add Thai red curry paste mix and add coconut milk and stir until paste and cream are fully combined and turns smooth. dd the lime juice, fish sauce, sugar and salt let it boil then add your meat balls. simmer for 20 minute until thicken, Add fresh basil and stir to combine. Serve over your choice of rice or roasted veggies, with cilantro and crushed red pepper flakes for additional heat.
