Eggplant, aubergine or brinjal is a plant species in the nightshade family Solanaceae. Solanum melongena is grown worldwide for its edible fruit. Most commonly purple, the spongy, absorbent fruit is used in several cuisines. Typically used as a vegetable in cooking, it is a berry by botanical definition.
Aubergines are an excellent source of dietary fibre. They are also a good source of vitamins B1 and B6 and potassium.

  • 3 tbsp olive oil
  • 2 aubergines halved lengthways
  • 4 to matoes
  • 1 x ball mozzarella drained
  • handful basil leaves


  • In an oven with 200C/fan 180C/gas cook aubergine drizzle with olive oil for 25 mins until softened, slice tomatoes and mozarella and put on the top of aubergine, then put back in the oven for another 5 mins until cheese melts. Serve with couscous and green salad.
