Macaroni and cheese—also called mac 'n' cheese in the US, macaroni cheese in the United Kingdom—is a dish of cooked macaroni pasta and a cheese sauce, most commonly cheddar. It can also incorporate other ingredients, such as breadcrumbs, meat and vegetables. Traditional macaroni and cheese is a casserole baked in the oven; however, it may be prepared in a sauce pan on top of the stove or using a packaged mix. The cheese is often first incorporated into a Béchamel sauce to create a Mornay sauce, which is then added to the pasta. In the United States, it is considered a comfort food. Ingredients
  

  • FOR THE MAC & CHEESE
  • Butter for baking dish
  • 2 medium heads cauliflower cut into florets
  • 2 tbsp. extra-virgin olive oil
  • Kosher salt
  • 1 c. heavy cream
  • 6 oz. cream cheese cut into cubes
  • 4 c. shredded cheddar
  • 2 c. shredded mozzarella
  • 1 tbsp. hot sauce optional
  • Freshly ground black pepper
  • FOR THE TOPPING
  • 4 oz. pork rinds crushed
  • 1/4 c. freshly grated Parmesan
  • 1 tbsp. extra-virgin olive oil
  • 2 tbsp. freshly chopped parsley for garnish

Instructions
 

  • Preheat oven to 375° and butter a baking dish. In a large bowl, toss cauliflower with 2 tablespoons oil and season with salt. Spread cauliflower onto two large baking sheets and roast until tender and lightly golden, for 40 minutes. Meanwhile, in a large pan over medium heat, heat cream. Bring up to a simmer, then lower the heat and stir in cheeses until melted( don't burn the cheese). Remove from heat, add hot sauce (optional)and season with salt and pepper, then fold in roasted cauliflower. Taste add seasoning if needed. Transfer mixture. In a medium bowl combine pork rinds, Parmesan, and oil. Sprinkle mixture in an even layer over cauliflower and cheese. Bake until golden, 15 minutes. If desired, turn oven to broil to toast topping further, about 2 minutes. Garnish with parsley before serving.
