Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. A full quesadilla is made with two tortillas that hold a layer of cheese between them. A half is a single tortilla that has been filled with cheese and folded into a half-moon shape. A quick version of the quesadilla, the cheese tortilla, is microwaved and often served to children. This Keto quuesadillas is an easy to cook recipe that your family will truly enjoy.

  • 1 tbsp. extra-virgin olive oil
  • 1 bell pepper sliced
  • 1/2 yellow onion sliced
  • 1/2 tsp. chili powder
  • Kosher salt
  • Freshly ground black pepper
  • 3 c. shredded Monterey Jack
  • 3 c. shredded cheddar
  • 4 c. shredded chicken
  • 1 avocado thinly sliced
  • 1 green onion thinly sliced
  • Sour cream for serving


  • Preheat oven to 400Âș, line two medium baking sheets with parchment paper, In a medium pan over a medium heat, add oil, combine pepper and onion, seasoned with chili powder, salt and pepper, cook until soft for 5 minutes. transfer into a small bowl. In a separate medium bowl mix in cheese. In the prepared baking sheets placed 1 1/2 cup of cheese mixture shape into a circle with an even layer ( size of a tortilla). bake cheese until melt and slightly golden (don't let it burn) 8 to 10 minutes. add onion-pepper mixture, shredded chicken, and avocado slices to one half of each, let it cool, with a spatula gently fold one side of the cheese tortilla over the side with the fillings, return to oven and cook for another 3 to 4 minutes, repeat procedure. garnish with green onion and sour cream before serving
