Ingredients
  

  • 1 8-oz. block cream cheese, softened
  • 3/4 c. coconut flour
  • 1 tsp. stevia
  • 1/2 tsp. pure vanilla extract
  • 1 tsp. cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 c. grated carrots
  • 1/2 c. chopped pecans
  • 1 c. shredded unsweetened coconut

Instructions
 

  • In a large bowl, using a hand mixer, mix in together all the ingredients cream cheese, coconut flour, stevia, vanilla, cinnamon, and nutmeg. Fold in carrots and pecans. Roll as many as you can in shredded coconut and serve
