Tofu Katsu Curry

No meat, that's no problem. Tofu is best alternative for your meat, as we all know tofu is made of soy milk and also a a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron and calcium and the minerals manganese and phosphorous. In addition to this, it also contains magnesium, copper, zinc and vitamin B1. This vegan recipe is also an Indian cuisine inspired since curry sauce is present in this dish, it is another evolution of your favorite vegan meal.

Ingredients
  

  • Curry sauce:
  • 30 ml of vegetable oil
  • 1 white onion finely sliced
  • 1 tsp fresh ginger grated
  • 2 garlic cloves minced
  • 1 tbsp of mild curry powder
  • 2 tbsp of plain flour
  • 400 ml kombu dashi
  • 2 1/2 tbsp of tamari soy sauce
  • 1 tbsp of honey
  • 1 tsp rice vinegar
  • 2 tsp garam masala
  • Tofu katsu:
  • 300 g of firm tofu
  • 1 large egg
  • 125 g of plain flour
  • 100 g of panko breadcrumbs
  • pinch of salt and pepper
  • vegetable oil for frying

Instructions
 

  • Start making the sauce, Into a pan heat oil and sautee onion, garlic and ginger until tender, for approximately 2–3 minutes. add curry powder mix in with flour and cook of for 2 minutes and start to pour the dashi, soy sauce and honey. Simmer, stirring occasionally until the sauce thickens, then mix in ice vinegar and garam masala, cook for a minute and put salt. let it cool. Cook rice according to the instruction.
  • For the Tofu slices into a 1cm thick slices, plate flour on a plate and season with a pinch of salt and pepper, in a bowl beat an egg , in a shallow dish put breadcrumbs. Roll each slice of tofu in the flour, then the egg, then the breadcrumbs to coat, and start frying in a large pan 2 minutes per side, then place in a kitchen paper to drain, To serve, place some rice in each bowl, place the crispy tofu on top and pour over the curry sauce. Serve with spring onions and shallots and rice.
