- Chocolate Mousse Filling
- 1 box sugar free instant chocolate pudding mix 4 serving size
- 1 cup half and half cream
- 1/2 cup heavy cream
- 2 tablespoons peanut butter
- Crepes
- 1 tablespoons butter
- 4 eggs room temperature
- 2 tablespoons cream cheese room temperature
- 1/4 cup sugar free brown sugar cinnamon syrup
- Cocoa powder for dusting
in a mixer add all the filling ingredients beat on high speeds until it becomes mousse-like, transfer and cover, put in the refigarator.
Fr the Crepes: In a blender put eggs, cream cheese, and syrup blend until well comvined and smooth. in an nonstick pan melt butter over low heat, pour in the egg mixture until golden brown. put into the plate spoon 1/1 of the chocolate mousse down to the center of the crepe fold over it and roll gently repeat procedure, sprinkle with cocoa powder.
